During my travel to Australia last December I came across some wonderful recipes – incredible tastes mixed with unmatched freshness. Having tried breakfast in so many places over three weeks, this is a recipe of one of my favourite breakfast dishes- Shakshouka.

 

Let your Mum sleep in and ask your Dad to help you prepare and serve in bed.


Ingredients:
• 1 Tbs olive oil
• 1 onion sliced
• 2 capsicums (green, yellow or red) chopped
• 1 teaspoon paprika
• A pinch of dried chili flakes
• 4 ripe tomatoes, chopped
• 2 eggs


Method of preparation:
Heat the oil in a frying pan, add the onion and capsicum and cook until softened. Stir in the paprika and chili flakes and cook for 5 minutes. Add the tomatoes and cook for another 2 minutes. Season with sea salt and black pepper.

With your wooden spoon clear two holes in the mixture, crack an egg into each one and cook to your liking. Sprinkle with a little paprika and serve with toasted flatbread.
